Swiss chard is a leafy green vegetable that adds vibrant color and nutrients to meals. However, like most produce, Swiss chard is perishable and can go bad quickly if not stored properly. Learning how to keep Swiss chard fresh for as long as possible ensures you can enjoy its taste and health benefits before it spoils.
In this step-by-step guide, you’ll learn tips and techniques for storing Swiss chard, from harvest to table. Follow these best practices for refrigerator, freezer, and other storage methods to extend the shelf life of fresh Swiss chard.
Step 1: Harvest at Peak Freshness
The first step for long-lasting Swiss chard is harvesting it at its freshest. For the best flavor and texture, harvest Swiss chard in the morning after the dew has evaporated but before the sun gets too hot. Choose leaves that are vibrantly colored and crisp. Avoid any that are wilted, yellowed, or damaged.
Use a sharp knife to cut each leaf off just above the crown of the plant, Handle the leaves gently to avoid bruising Swiss chard can be harvested multiple times throughout the growing season as new leaves emerge,
Step 2: Remove Any Bad Spots
Once harvested inspect the Swiss chard leaves and remove any spots that are browned or slimy. These parts will decay quickly and lead to spoilage. Simply use a paring knife to trim away any damaged or discolored areas. Discard the trimmings.
Step 3: Rinse Thoroughly
Rinse the Swiss chard leaves under cool running water This removes any dirt or debris that could cause the leaves to spoil prematurely Be sure to rinse in between the leaves and where the stems meet the leafy portion.
Gently shake off any excess moisture. You can also use a salad spinner to dry the leaves. Avoid bruising the leaves when handling them.
Step 4: Store Properly
Refrigerator Storage
For short-term storage, refrigeration is the best way to keep Swiss chard fresh. Place the clean, dry leaves in a perforated plastic bag or wrapped in paper towels. This allows air circulation while retaining moisture.
Store the wrapped Swiss chard in the crisper drawer of the fridge. The high humidity of the crisper will prevent the leaves from drying out. Properly stored, Swiss chard will last 5-7 days in the fridge.
Freezer Storage
For long-term freezer storage, start by blanching the Swiss chard. Blanching stops enzyme actions that can cause loss of flavor, color, and texture.
To blanch, dip the leaves in boiling water for 2-3 minutes. Then plunge them into an ice bath to stop the cooking process. Drain, pat dry, and pack into freezer bags or containers. Frozen Swiss chard will last about 10-12 months.
Other Storage Methods
Dehydrating and fermenting are other ways to preserve Swiss chard for months. Dehydrated Swiss chard can be stored in an airtight container for up to a year. Fermented Swiss chard stored in jars in the fridge can last 4-6 months or longer.
Canning is not recommended for Swiss chard leaves due to texture and flavor changes during the canning process. However, pickled Swiss chard stems can be safely canned using a tested recipe.
Step 5: Use Promptly After Storage
Regardless of the storage method, be sure to use Swiss chard promptly once removed from storage. Thaw frozen chard overnight in the fridge before using. Rehydrate dehydrated leaves by soaking in water.
Wash pre-stored leaves again before eating to freshen. Avoid keeping thawed or rehydrated Swiss chard more than a day or two. Cooked Swiss chard also does not store well, so only make what you plan to consume immediately.
Extra Tips for Keeping Swiss Chard Fresh
-
When buying Swiss chard from the store, look for perky, crisp leaves with no moisture or sliminess. Avoid bunches with yellow, limp, or wilted leaves.
-
Do not wash Swiss chard before storing in the fridge, as excess moisture speeds up decay. Wash just before using.
-
Wrap or cover Swiss chard properly in the fridge to prevent contact with ethylene gas from ripening fruit that can cause it to yellow.
-
Cook Swiss chard within 2-3 days of purchasing for best flavor and texture. Older leaves become bitter and fibrous.
-
Cut or tear leaves; do not cut with a knife which can cause oxidation and browning at the cut site.
-
Consume blanched Swiss chard within 1-2 days for maximum freshness. Freezing after blanching better preserves texture and nutrients.
-
Check stored Swiss chard occasionally for signs of moisture or spoilage. Discard any leaves that are discolored or smell unpleasant.
With proper handling from harvest to table, you can enjoy fresh, crisp Swiss chard for up to 2 weeks. Follow these tips for refrigerator, freezer, and alternate storage methods. And be sure to cook Swiss chard soon after taking it out of storage for the best quality and taste. With this handy guide, you can master keeping Swiss chard fresher for longer.
How to wash chopped Swiss Chard
Wash the chopped chard leaves by filling a salad spinner with water, add the leaves and then swish. Lift the basket out leaving any soil or grit behind in the bottom of the salad spinner. Drain away the water and spin dry.
Transfer the leaves out of the basket, and add the stems in. Run cold water over them, swishing to remove any grit. Then lift the basket out of the water and drain away the water. Spin dry or spread on a dry kitchen towel to drain.
